Starting Over

I used to be very, very good at feeding a family of four on less than $300 a month, including my father-in-laws lunches and sodas for work.  Then we moved out of his house, and I got a job, and life got a Whole Lot More Hectic, so I wasn't doing that well.  I'd keep my pantry and freezer stocked the way I did before, but I wouldn't DO anything with it.  I also have a tendency to do things like make hamburger patties, hoping to make buns from scratch...and then never make the damn burgers because I could never force myself to make the silly buns.  Instead, we'd go to Burger King or something.  So, it seemed like my ideals were kind of defeating themselves, so I decided to let convenience win a little bit so that I'm cooking nightly.

1.  Lemon-pepper salmon, baked potato fries, seasoned green beans and peaches
2.  Beef stroganoff
3.  Pintos and cheese (served with a salad and tortilla chips)
4.  Shrimp scampi, salad, some sort of noodly side dish
5.  Soupburgers and some sort of fruit on the side (soupburgers are basically sloppy joes - ground meat, a can of tomato soup, and a can of vegetable soup...silly family recipe that's actually pretty good)
6.  Homemade pizza, probably with tomatoes and spinach on top.
7.  Leftover day (I try to make leftover day NOT a day directly after we have something large because Hubby works 3rd shift and takes dinner leftovers for lunch.  He's grumpy if I try to make him eat the same thing three times in a row.)

8.  Spaghetti squash with homemade sauce, and possibly homemade italian bread (dough's in the freezer)
9.  Lemon-pepper pork chops, some sort of ricey side dish, broccoli and cauliflower
10.  Homemade chicken noodle soup and grilled cheese sandwiches
11.  Tuna noodle casserole (my mom's recipe, completely re-done, lol)
12.  Stir fry (although I'm not sure if it'll be with shrimp or beef) and homemade cheese wontons
13.  Cheeseburgers, sweet potato fries, pasta salad (which includes carrots, peas, spinach, peppers, and any other veggies I can safely sneak in)
14.  Leftover day.

15.  Cheesy chicken and rice (a la Campbell's...I've never tried the recipe, and would like to make something new at least once a month)
16.  French toast and eggs, because I get cravings sometimes!
17.  Steak, mashed potatoes and gravy, and some sort of veggies
18.  Tilapia, with whatever sides I come up with
19.  Veggie lasagna
20.  Taco salads
21.  Leftovers

Not on the 'list' but coming up in the near future (or going to be prepared for the freezer) are cream of broccoli soup, pancakes, white bean chili, chicken quesadillas or fajitas, and I want to try my hand at saurbraten like my MIL makes.  Hopefully I can stick to the plan, anyway!
